Bushwhacker– the shot– in honor of the bull

WAHOO!! I’m headed to the PBR in Nashville tomorrow for two nights of watching bull riding with some of my fab James Gang members and my wild women twitter pals! I’m hoping the notorious bull, Bushwhacker will be there to strut his stuff. I came across this jello shot, ironically enough, named Bushwhacker, and thought I’d share it…however, I’ll be taking my drinks straight from the tap, the can, or the shot glass this weekend, because who has time to fuss with fancy drinks when there are bull riders wandering around?

But if you have time, and are creative in the kitchen here’s the recipe — looks like these little suckers pack a helluva punch and if you shoot too many of them…well, you’ll feel like the bull Bushwhacker stomped the shit out of you 🙂

Bushwacker Jelly Shots

Ingredients:
  • ½ cup water
  • 3/8 cup vanilla ice cream, melted
  • 2 envelopes Knox gelatin
  • ÂĽ cup Kahlua
  • ÂĽ cup crème de cacao
  • ÂĽ cup Bailey’s
  • 1/8 cup light rum
  • 1/8 cup dark rum
  • 1/8 cup amaretto
  • 1/8 cup Coco Lopez
  • Magic Shell ice cream topper, for garnish, if desired

 

Pour water in saucepan, sprinkle with gelatin.  Allow gelatin to soak for a few minutes.  Add the melted ice cream.  Heat over very low heat until gelatin is dissolved, stirring constantly (approximately 5 minutes).  Once combined, stir in the Coco Lopez, rum and the liqueurs.
Pour mixture into standard glass or non-reactive metal 1 lb loaf pan (approximately 8” x 4”).  Refrigerate until fully set (several hours or overnight).
To serve, cut into desired shapes.  Drizzle with Magic Shell, and place in freezer for 30 seconds to harden.  Return to refrigerator until immediately before serving.

    Hope you have a great time and take lots of pictures of those hot bull riders! 🙂 I went to the event in Arlington this year, and I was lucky enough to be able to see both Bushwacker & Asteroid. I just set up my line up for the weekend, and sadly Bushwacker wasn’t on the list for the event. But you will get the chance to see Asteroid though on the short go in round 2!

    I miss the PBR since it left Versus. I do still follow them via e-mails. Sounds like a great time and I will try the recipe. I really got turned on to bull riding through your books. (In more ways than one)

    I’m allergic to my kitchen. When I get in there I’m like Bushwacker on steroids…it’s a terrible thing to witness and lethal. But please take lotsa pix of those PBR riders for us to enjoy…I do love my cowboys. Yee Haa! Ya’ll have an easy-on-the-eyes weekend.
